3 zucchini, unpeeled and sliced thinly lengthwise

1 tsp. green onion, sliced (green & white parts)

1 tsp. finely chopped Italian parsleyVedure Girigliate

¼ tsp. sea salt

Juice of ½ lemon

1 TB extra virgin olive oil

1/8 tsp. pepper

Zest of ½ lemon


Brush zucchini slices with a little evoo to prevent sticking. Grill at medium high heat until grill marks form and slices are softened. Dress with mixture of remaining ingredients. Marinate for 15 minutes. Serve immediately or at room temperature.
